The calf will be registered as a Purebred.

I was hearing rumors that JPJ was a shorthorn plus but papered as a shorthorn. If we want to show this as a cow calf pair how would we do so if the Dam would be a shorthorn plus and the calf a shorthorn?

Rumors are Rumors.  Almost ALL Shorthorns are technically not "Purebred" as in Fullbloods. You would have to show the pair as a ShorthornPlus.
