I really think Afterhours (IW x Dr WHo/Imprint) would work wonders on the Monopoly cow.  He will improve structure, and give you unbelievable udder quality in his daughters.  I think i would lean toward simmi on the IW cow.  a blaze faced Broker daughter would be awful cool on her.
