I have always wanted to try it, but afraid to try and make it myself.

have no fear, just throw some bones in with whatever your're cooking, and spoon it out on some bread.

bone marrow is like beef foie gras!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

it's TOTALLYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYYY awesome.

my bro said he just bought $400 of meat from a door to door salesman.  legit with business name and license on truck, label on shrunk wrap.  don't know what he paid.  said it was hung for between 2-4 weeks.  how they control that i don't know.

Shank is a great cut for soup and there is a nice clump of marrow in every bone. I was selling shank soup bones and meatless bones real cheap at the grocery store so the people who could not pay big bucks for grass fed beef could at least make soup. Those bones sold as fast as I could put them out. They cook down the knuckle bones for collagen or something and, like you said, marrow is some of the richest food around. A lot of people in cancer recovery were requesting the shank bones--for the marrow?

Clovis people and Cheyenne dog soldiers broke open bones to eat marrow. High fat or high protein....I forget which.
