Happy 4th to all!!  I know my country has many faults, but it has so many more strengths!  I wouldn't live anywhere else (Ok, I might CONSIDER Australia)

My plans:  Having a few friends over. Grilling beef tenderloin, garden fresh veggies (green beans, red potatos, broc, carrots, yellow summer squash)  in a grilling pan next to it with real butter. Homemade bread with homemade stawberry freezer jam. Black raspberry fluff. Hot Fudge butter brickle ice cream dessert.  And then marshmallow hersey dessert at fireworks time!

What's everyone elses plans?

(I forgot the sweet corn! Can't forget the sweet corn!!)

HAPPY 4th (a bit early) to everyone.  I am doing a shrimp/ crab/ clam boil for lunch and smoking a pork but for dinner.  Along with that is corn, the best potato salad ever, pasta salad, home made red white and blue Ice cream, cake, brownies, the whole nine yards.  I might even smoke some salmon.  It is supposed to rain all day tomorow here so some of this might have to wait till monday.

We will spend most of our time at our Family's cabin enoying fellowship with family and friends celebrating the freedoms we have.

Below is a recipe that I found a while back for a good ole grilled burger.  The boys love them.

The Perfect Burger Recipe

Here are the ingredients & the instructions to make the perfect burger! Although it may not be the healthiest, use medium ground beef for moistness & flavour. The leaner varieties produce burgers that are drier with a denser, tighter texture. Don't use previously frozen meat as juices are lost during defrosting. If making ahead, cover with plastic wrap & refrigerate for no more than a day. Enjoy!

SERVES 4 (I quadrupled it and made 16 nice sized burgers)
*
BURGER
* 1 egg
* 1 teaspoon mustard (regular or Dijon)
* 1 teaspoon Worcestershire sauce
* 1 small onion, finely grated
* 1 clove garlic, minced
* 1/2 teaspoon salt
* 1/2 teaspoon pepper
* 1 lb medium ground beef
FLAVOUR PERK STIR-INS (I just went with BBQ sauce the first time I made them)
* 1 tablespoon creamy caesar salad dressing or Greek salad dressing
* 1 tablespoon chopped sun-dried tomato
* 1 tablespoon sour cream or yoghurt
* 1 tablespoon grated fresh lemon rind or lime rind
* 1 tablespoon grated gingerroot
* 1 tablespoon ketchup or barbecue sauce
* 1 teaspoon lemon pepper
* 1 teaspoon curry powder
* 1 teaspoon dried oregano or dried thyme or dried rosemary
* 1 tablespoon fresh herb
* 2 teaspoons cajun seasoning
* 1 teaspoon sesame oil
* 1 teaspoon teriyaki sauce or hoisin sauce
* 1 fresh jalapeno or pickled jalapeno pepper, chopped
1. Lightly oil grill& heat BBQ to medium.
2. Whisk egg in a bowl& add next 6 ingredients.
3. Add any of the "stir-ins" that appeal to you.
4. Crumble in beef& using your hands or a fork, gently mix together.
5. Handle the meat as little as possible - the more you work it, the tougher it gets.
6. Gently shape (don't firmly press) mixture into burgers about ¾ inch thick.
7. Using your thumb, make a shallow depression in the centre of each burger to prevent puffing up during cooking.
8. Place burgers on the grill, close lid& BBQ until NO LONGER PINK INSIDE, turning once, about 6 - 8 minutes per side.
9. An instant read thermometer should read 160F.
10. Don't abuse your burgers by pressing with a spatula, *****ing with a fork or turning frequently as precious juices will be lost!
11. Tuck into a warm crusty bun& add your favourite toppings.

Watch some of the shows on the History Channel this weekend to get a perspective of not only what our forefathers have gone through, but also how our current politics aren't knew but in fact something of a 200 year old tradition.  How the States Got Their Shape is pretty fascinating

I just use the original ingredients, not any of the others.  I grill them just like recipe describes.  The thumb imprint in the middle really helps.

The last time I cooked them, I tried something a little different and they turned out real good.  With all the ingredients involved, they tend to fall apart pretty easily when grilling.  I used a patty maker and put them on a cookie sheet with wax paper and placed them in the freezer for about 45 minutes.

Hope that helps.
Let me know what you thought of them.

My plans include being at the Hereford Jr. National all day, and eating with whoever will have me.

Happy 4th of July to all my American friends! I will be spending today having our annual family BBQ and picnic at the farm. Steaks, cold drinks and lots of laughs.
Then back to the hay field tomorrow. I think those of us who live in the US, Canada, and Australia should remember how fortunate we are to live where we do.
