I know ABSOLUTELY NOTHING about the club calf deal... but from what you've told us, I'm in the camp of recommending staying with an OCC-type Angus.
Have a look at OCC Prototype... does what all the other OCC cattle seem to do, but is also a carrier of the M1 'double-muscling' gene... would only pass it to half his offspring... but to me, it looks like even the heterozygotes have better muscle expression.
