First, where are you located? There are no cattle stolen here. Most people around here are scared of cattle.
Second, don't have any corrals in this new pasture, that just makes it easier to pen and load the cattle. Also add locks and heavy chain on the entrances.
Third, daily checks to keep an eye on things, making sure nothing is out of sorts. Read a story once where a cattle thief daily set up pieces of a corral until the whole thing was set up. Owner never checked on the cattle so he never saw it. And the cattle were stolen just like that.
